Cooking that reads the country it comes from
Red Earth was built on a simple conviction: South Australia grows some of the finest produce on the planet, and it deserves a dining room that treats it with respect rather than theatre. Our kitchen works with muntries, quandongs, saltbush and wattleseed alongside Barossa lamb and Spencer Gulf prawns.
Every supplier is named on the menu. Every cut is butchered in-house. The wood grill burns mallee root, and nothing leaves the pass that we would not serve to our own families.

Mallee-Grilled Barossa Lamb

Three elements run everything we cook
Fire gives the flavour, the coast gives the catch, and the red soil of South Australia gives us everything else.
Fire
Mallee root coals burn hot and clean. We grill, roast, smoke and finish almost every dish over open flame rather than under a salamander.
Water
Coffin Bay oysters, Spencer Gulf prawns, Port Lincoln tuna. Our seafood arrives within a day of leaving South Australian water.
Earth
Quandong, wattleseed, saltbush, muntries. Native botanicals from the outback pantry give our plates a flavour you cannot import.
Spring at SkyCity: green shoots and new-season lamb
For ten weeks only, our menu leans into the Hills harvest: broad beans, spring peas, asparagus and the first new-season Barossa lamb, paired with just-released Adelaide Hills whites.
