Our kitchen runs on full display. The mallee grill, the ageing cabinet, the pastry bench — all visible from the dining room. We built it that way because a kitchen you can watch is a kitchen that stays honest.

Every supplier on our menu farms, fishes or forages inside South Australia. These are the regions that fill our cool room each morning.
Eyre Peninsula
Coffin Bay oysters, Spencer Gulf prawns and Port Lincoln line-caught fish, landed within 24 hours.
Barossa Valley
Lamb, heritage pork and smallgoods from third-generation family farms twenty minutes from our door.
Adelaide Hills
Market gardens supplying heirloom vegetables, orchard fruit and the cheeses on our board.
The Outback
Wild-harvested quandong, wattleseed, saltbush and muntries through Indigenous-owned collectives.

The dining room sits inside SkyCity's restored Railway Station building on North Terrace — 1920s stonework outside, warm timber and open flame inside.

Herbs grown eleven floors above your table
On the SkyCity roof we grow native thyme, saltbush, lemon myrtle, sea parsley and thirty other herbs and microgreens. The garnish on your plate was still growing this afternoon.

Made by hand, kept for decades
Everything you touch in the room — the tables, the plates, the light fittings — was made by South Australian artisans.

Every plate is thrown in Seppeltsfield. No two are identical, which is exactly the point.
Tables of reclaimed red gum
The dining room tables were milled from a single river red gum felled by storms near Renmark.
Lighting in blown glass
Forty-six pendant globes, each blown in Adelaide and tinted the colour of mallee smoke.
Zero waste is a recipe, not a slogan
We run the kitchen to a simple rule: every ingredient is bought with a plan for its trimmings. What cannot be eaten becomes stock, staff meal, compost for the rooftop, or biofuel through our waste partner.
